quinoa waffles
The versatility of waffles is endless and I love that they can be adapted to every season. These are filled with good-for-you foods like oil, quinoa and oats and can easily be enjoyed for breakfast. They’re gluten-free and will keep you going for hours. Served with a dollop of skyr - or your preferred yoghurt - along with fresh berries or fruits of the season and a drizzle of liquid honey, they’ve become our new go-to waffle recipe and I hope you’ll love them too.
Ingredients, 3 waffles
100 g boiled quinoa
100 ml milk
3 eggs
2 tbsp rapeseed oil
1 lemon, finely grated zest
1 pinch of fine salt
0,5 tsp baking powder
50 g oat flour
Directions
Whip the eggs in a bowl and add the other ingredients. Whisk well and let the batter sit on your counter for approx. 20 minutes for the oats to soak up the liquids.
Bake your waffles in your waffle maker and serve with your preferred toppings.
