vanilla flavored rhubarb compote

The rhubarbs are such a welcoming treat as they’re the first produce ready for harvest in our garden every single year. It’s the easiest plant to grow ever and if you don’t have it in your garden yet, I suggest you consider getting it. This compote is very simple to make and it works perfectly as a spread on bread, on yoghurt, porridge or with pancakes or waffles. I was aiming for a very smooth texture of this, as we’re using it as filling in a star bread, you’ll find the recipe here but feel free to reduce the boiling time to get a more chunky compote.

Ingredients

450 g rhubarbs

150 g raw sugar

1 tsp vanilla powder

Using the queen of spring for a delicious vanilla flavored rhubarb compote

Directions

Rinse the rhubarbs and cut them into chunks of 1,5 cm approx. Transfer to a saucepan, add sugar and vanilla and bring to a boil while stirring to make sure it doesn’t char. Let it simmer without lid on untill the rhubarbs are tender and most of the liquid has evaporated. Head to my IG reel here to see the texture I was after. I boiled the compote for approx. 30 minutes to get this smooth texture.
