zucchini & chocolate loaf

With the generous amount of zucchinis in our garden this year, we’re making the most of it! The ingredient list contains, besides zucchini as the main character, nourishing elements like skyr, oil and oat flour to make sure that even in a sweet bake like this, every bite will nourish you and your tastebuds. It’s a simple one to make and in no time you’ll be able to share it with your loved ones. As the zucchinis add to moistness, the loaf is also great next day if you’re able to save some.

Healthier zucchini loaf with oat flour and skyr

Ingredients

270 g roughly grated zucchini

150 g roughly chopped dark chocolate 70%

2 eggs

180 g sugar

75 g skyr, vanilla flavored

2 tbsp rapeseed oil

100 g oat flour

120 g all purpose flour

2 tsp baking powder

0,5 tsp fine salt

Directions

In a large bowl, whip eggs with sugar with a handheld mixer until fluffy. Stir in skyr and oil.

In a seperate bowl, mix the two types of flour with salt and baking powder. Gently mix the dry mixture into the wet until just combined. Finally, fold in the zucchini and chocolate.

Pour the batter into a well greased bread baking pan and bake at 180 degrees Celsius for approximately 45 minutes, until a toothpick comes out clean. Leave to cool down before removing it from the pan.
