Spinach & wild garlic waffles

With the wild garlic growing vigorously in a near by forest, we’ve made it a spring tradition to go and forage a huge bunch. Here I’ve added some to wholegrain green waffles for extra flavor.

Ingredients, serves 4

3 eggs

300 ml milk

50 g fresh spinach

25 g wild garlic leaves

75 g white wholewheat flour

100 g all purpose flour

1 tsk baking powder

1/2 tsp salt

Pepper

Butter or oil for your waffle iron

Directions

Blend together all the ingredients and bake your waffles. Serve with other seasonal greens.
