chickpea snack balls

A classic treat in our home that everyone loves!!! Chickpeas might not be a common ingredient for sweet treats, but make no mistake, they work perfect for these balls that are both vegan and gluten-free. I hope you’ll feel like trying the simple recipe, I’m pretty sure they’ll become your new favorite treat too. In season, when our garden mint grows vigorously, we substitute the dry mint in the recipe with a handful of fresh leaves.

Noone can resist these healthy snack balls made form chickpeas and mint.
Cocoa and mint snack balls for the sweet tooth when you do not want to compromise on nutritional quality

Ingredients you’ll need for 25 balls

1 can of boiled chickpeas, 240 g drained weight

125 g soft dates, pitted

2 tbsp raw cocoa powder

2 tbsp gf oats

2 tbsp coconut oil, melted

3 tsp dried mint

Extra raw cocoa powder (optional)

Vegan snack ball recipe made  from chickpeas. Sweetened with dates.

Directions

Add all the ingredients to your mini chopper or food processor and pulse until the mixture is smooth. You’'ll need to scrape down the sides a couple of times. If it feels a bit too dry, add a tiny splash of cold water and pulse again.

Transfer to the fridge to cool down and harden slightly for at least an hour.

Using a teaspoon, scoop up mixture and roll the balls in your hands. Roll in raw cocoa powder if using. Store in fridge and serve chilled.
