asparagus and ramson spread

With ramson in season, I persuaded my girls to join me on a trip to the woods, maybe you saw my video on IG? Part of it was used for this vegan spread, very simple but oh so good! And though I call it a spread, it can easily be used as a dip.

Vegan spread made from wild garlic and asparagus

Ingredients for 1 small jar

10 asparagus

6 large wild garlic leaves with stalk

50 ml olive oil

1 tbsp pumpkin seeds

0,5 tsp lemon juice

Salt & pepper

Directions: Wash the asparagus and ramson. Cut off the top of the asparagus and save it for decoration. Place all the ingredients in your mini chopper and pulse undtil smooth. Season with salt and pepper and more lemon juice if needed. If texture is too fluid, add another tbsp of pumpkin seeds. Use as spread on bread and top with the asparagus heads.
