Pear and chocolate muffins

Delicious and sugar free oat muffins with autumn’s flavorful and ripe pears. No sugar or sugar replacement is added as I find the ripe pears add enough of sweetness. Very simple to make and a healthier choice if you’re in need of a little treat without compromising on the nutritional quality.

Pear and chocolate muffins

Ingredients for 8 large muffins

4 ripe pears, preferrably Clara Friis if available

3 eggs

100 ml milk

2 tbsp rapeseed oil

75 g rolled oats

75 g oat flour

40 g all purpose flour

1 pinch of fine salt

1 tsp baking powder

1 tsp ground cardamom

75 g chopped dark chocolate 70%

Directions

Whip eggs, milk and oil in a large bowl. Add the oat flour and oats, stir and let the mixture soak while you prepare the pears.

Wash the pears and cut two of them into chunks. Grate the other two roughly. In a seperate bowl, mix the all purpose flour with baking powder, cardamom and salt. Add the dry mixture to the wet along with pears and stir until well combined. Chop the chocolate and add to the dough as well. With a spoon, scoop the dough into muffin forms. Bake at 200 degrees Celsius for 30-35 min. Test for doneness by inserting a toothpick, - they’re done when it comes out clean.
